ROASTED BASIL BUTTER PARMESAN SHRIMP

INGREDIENTS

¼ cup freshly grated Parmesan

2 teaspoon salt

2 teaspoon olive oil

3 tablespoon freshly chopped basil

1 teaspoon pepper

6 teaspoon unsalted butter[should be at room temperatures}

2 pounds raw, peeled and deveined shrimp

Additional fresh basil and cilantro herbs for sprinkling

 

PROCEDURE

· Mix butter, basil and a quarter teaspoon salt in a bowl until they fully combine.

· Place butter on a plastic wrap, modeling it into a ball and wrapping it up and place it on a fridge to harden

· Add shrimp to a baking dish. Cover it with salt, olive oil and pepper tossing it o coat.

· Roast for 10-15 minutes until they turn pink in color. Remove them immediately

· Slice basil butter on top and cover in parmesan and sprinkling of herbs

· Serve immediately

 

 

SPICY COCONUT AND LIME GRILLED SHRIMP

INGREDIENTS

¼ Cup olive oil

¼ cup soya sauce

1 pound uncooked medium shrimps, peeled and deveined

1/3 cup chopped cilantro

1/3 cup shredded coconut

2 garlic cloves 1 lime zested and juiced

2 peppers; jalapeno and must be seeded

· Blend pepper, lime , coconut, olive oil, cilantro soy sauce and garlic until smooth using a blender.

· In a large bowl place the shrimps

· Piercing the shrimp near the tail and head thread them onto the skewers

· Cook the skewers on a preheated grill turning them until they turn brown on all sides

INGREDIENTS

2 pounds medium shrimp, peeled and deveined

1 tablespoon olive oil

24 ounces broccoli florets

1 teaspoon sriracha

1 green onion

3 tablespoon oyster sauce

1 tablespoon rice wine vinegar

1 teaspoon sesame seeds

1 tablespoon brown sugar

I teaspoon grated ginger

3 cloves garlic

1 tablespoon cornstarch

3 tablespoon sodium soy sauce

PROCEDURE

· Whisk together rice wine vinegar, oyster sauce, brown sugar, sesame oil, ginger, corn scratch, sriracha and corn starch

· In a large skillet heat olive oil in a medium heat

· Add shrimp and cook stirring time to time until pink in color for about 2-5 minutes

· In the soy sauce mixture stir frequently until well combined and slightly thick

· Serve immediately garnishing with green onion and sesame seeds

INGREDIENTS

8 ounces dried pad Thai noodles

8 ounces whole shrimps

3 tablespoon sugar

3 tablespoon fish sauce

4 tablespoon oil

2 tablespoon tamarind paste

White pepper

3 cloves 3 medium eggs

2 cups bean sprouts

2 tablespoon roasted peanut

1 cup of water

1 cup Chinese garlic chives

2 tablespoon salt preserved turnip

1 medium shallot

PROCEDURE

· In warm water soak the pod Thai noodles for 20 minutes and drain them in a colander

· Remove the head and the shells from the shrimp and collect them in a bowl

· Wash the shrimps and devein and set them aside

· Heat oil over high heat.Add shrimp shells and stir them fully until they turn orange and add water

· When n the liquid boils, place the shrimps heads with a metal spatula

· Simmer for about 5 minutes and then remove from heat

· In a bowl, strain the shrimp stock and discard the the shells and heads

· Add sugar, tamarind paste, fish sauce and white pepper to the stock and mix well.

· Ignite oil over high heat and sear the shrimp for 2 minutes

· Immediately they turn opaque remove the shrimp and set them aside

· In a frying pan add oil, spread the firm tofu in the work in one layer and sear on both sides until slightly browned

· Add the shallots,garlic,turnip and chives and turn high heat

· Add noodles and stir-fry until all ingredients properly combine

· Push noodles to one side and add oil another oil on the other side and crack your eggs

· Fold the eggs gently and when not completely done , fold the noodles over the eggs

· Lastly, add the beans sprouts and stir until they are cooked

· Serve the shrimp immediately with crushed peanuts

SHRIMP STUFFED BAKED POTATOES

INGREDIENTS

12 ounces frozen shrimp

2 potatoes ¼ cheddar cheese

Black pepper

¼ cup sour cream

PROCEDURE

· Wash the potatoes thoroughly

· With a folk, prick them severally

· For about 10 minutes place the potatoes in a microwave until well cooked

· Cut the potatoes into two halves and lift out potato flesh in a mixing bowl.

· Place the potato shells in a baking sheet

· In a large skillet sauté the shrimp scampi over a medium heat and after five minutes lift out the scrimp and set it aside

· Pour out the scampi sauce from the pan to a mixing bowl with innards of the potatoes

· Mash the scampi sauce with the potatoes

· Add cheese, sour cream and shrimp and stir to mix thoroughly and add pepper to taste

· Scoop potato and shrimp mixture into the four skin shells and place them on a baking sheet and bake for 15 minutes
